The Closest Non-Gluten Thing to Prata

So in my previous post, I talked about how I had to stop eating prata (roti prata/roti canai) as part of my unglutening journey.
The good news is that I found something that is the closest to it, sans-gluten. In fact, it's not just one, but two other Indian carbohydrates that in my opinion, makes the mark.
Paper Thosai The first recommendation is Paper Thosai. Made to be paper thin like its name suggests, the texture is crispy like a really thin prata, unlike a normal thosai which is chewy and soft. And because it has been fried in more ghee or oil, it has the buttery taste like roti prata. Definitely higher in calories as comapred to a normal thosai, but hey, unglutening doesn't mean we have to deprive ourselves of treats once in a while right.
Photo of Paper Thosai from www.foodadvisor.com.sg Onion Ghee Utthapam My second recommendation is onion ghee utthapam. Utthapam is similar to thosai as they are both made from batters consisting of rice flour and fermented pulses. I find that the plain or egg utthapam tend to be soft and fluffy like the standard thosai. But the onion ghee utthapam, is crispier perhaps due to the small onion bits that are fried together with the dough, and of course, the wonders of ghee. I sometimes ask the restaurant to make it crispier and some of them do by pouring less batter. While it is no where crispy like paper thosai or prata, I do find this dish a great second gluten-free alternative to rote prata.
